With 29 years he gets his first Michelin star. In 2017 he created in Segovia, Juan Bravo fonda illustrated, space where he offers a root kitchen and his most popular recipes. Arnanz runs his own gastronomic consulting cabinet. The chef collaborates with R&D teams in the 4th and 5th range sector with a team of biologists and nutritionists developing solutions that reach Spanish homes. He has just presented his book Ancha es Castilla, where he values the New Castellana Kitchen.
