In Spain I discovered a world of new products and techniques. After two years at the Submarine Restaurant, I headed to Denia, to the El Poblet restaurant of Quique Dacosta. Then in Valencia and after serving as head chef at Vuelve Carolina and El Poblet in Valencia, the latter with a Michelin star, I decide to change course and risk everything. Today I have four projects with Carito Lourenço Gastronomic Tandem, Fierro, Doña Petrona and the latest project La Dessert Center
