Manuel inició su carrera en Marketing en P&G México y luego pasó 15 años en Yum! Brands, liderando roles de marketing para Pizza Hut y KFC en México y el Reino Unido. En 2011 se convirtió en Director General de KFC Iberia, transformando la marca y duplicando su tamaño en España y Portugal en 6 años. Recibió premios como Hot Concepts (2013), KPMG por Generación de Empleo (2014) y Randstad Foundation por Responsabilidad Social (2016). En 2017 cofundó Chariots Investments, expandiendo su franquicia de KFC a 13 restaurantes y uno de Saona. En 2024 cofundó Glaseadas Originales con Krispy Kreme HQ.
