With the help of LABe Digital Gastronomy Lab, the Basque Culinary Center’s laboratory for innovation and digital transformation of Gastronomy, we will review some trends that have been on the rise since the pandemic and specific examples of collaborative projects and pilots between hoteliers, technology companies and food companies that are facing the digital transformation together.in the midst of an unprecedented era for the HORECA sector we have seen an acceleration of innovation and digital transformation, as well as the need to address them in collaboration between all key players in the value chain, to increase the likelihood of success.
