We will try to shed light on a confusing issue even for many professionals in the sector, clarifying what it means to be a Wine of Payment in the EU and what are the fundamental requirements to be recognized as such. We will use the presentation to clarify why certain wineries are called “Pago de…” when they are not Vino de Pago, and how is the coexistence in Spain of associations that include the term Payments in their denomination, when their members are not necessarily recognized Payments. Finally, we will give a few strokes on Pago Los Cerrillos, as one of the Payments that has joined the list of 19 Payments existing today in Spain according to the Registry of the European Commission, which has in its Denomination of Origin as maximum exponent of what a Wine of Payment is, to BODEGAS MONTALVO WILMOT.
