Coco Montes is the soul of Pabú. Born in Madrid, with a degree in Business Administration and trained at Le Cordon Bleu Paris (Grand Diplôme), he made a decisive turn toward gastronomy. His career was shaped by six years at L’Arpège (three Michelin stars) alongside Alain Passard, where he developed a cuisine rooted in ingredient respect, micro-seasonality and precise, honest technique. After cooking internationally and training at Zalacaín, Azurmendi and Eleven Madison Park, he created Pabú as his most personal expression: craftsmanship, hospitality and a cuisine that begins anew each day.
