He started at the age of 16 in the Santa Olivia chocolate factory and a few years later he was taken on as an apprentice by Antonio Escribá who, for 8 years, trained him as a pastry chef and master chocolatier. At 26 he founded the company Chocoprat and later became production director of Ludomar, presenter of programmes such as Deja Sitio para el Postre, Chocolateando on Canal Cocina and a guest on the MasterChef tests. An advisor to companies in the sector, David Pallàs is a specialist in bringing craftsmanship to production lines and improving work processes in the workshop.
