The SalaXperience Summit is presented as a unique space within HIP to explore the dining room from an innovative perspective, going beyond traditional service and focusing on experience, storytelling, and creativity in haute cuisine. The day begins with the official opening led by Diego Sandoval (Restaurant Coque) and BAYA Talent, who introduce the context and emerging trends that are transforming the role of the dining room in the sector.

 

The first block, The Dining Room Live, offers practical demonstrations by internationally renowned restaurants such as DIVERXO, MAZ, and MAIDO, followed by conversations with their teams to analyze the processes, techniques, and reflections behind each proposal. This section allows attendees to connect with real operations and discover how memorable guest experiences are built from the dining room.

 

In the second block, Dining Room Performance, participants experience an immersive session that blends gastronomy, art, and creativity, exploring the dining room from a narrative and emotional angle. The goal is to examine interaction, rhythm, and staging as key components of the gastronomic experience.

 

The third block is dedicated to the Awards Ceremony, recognizing outstanding professionals and projects in areas such as staging, non-alcoholic pairing, wardrobe design, disruptive concepts, and innovative tea and coffee proposals, among others. Finally, the fourth block, Discovering New Projects, highlights emerging initiatives in dining room service, sommellerie, and hospitality through short presentations and inspirational dialogues with their creators.

 

The SalaXperience Summit thus consolidates itself as a space for learning, inspiration, and connection, where the dining room evolves from a physical place into a strategic axis of innovation, storytelling, and experience in contemporary gastronomy.
