Who Is Driving Today’s Hospitality Market
Culinary Action!, the gastronomic entrepreneurship initiative of Basque Culinary Center, returns to its annual meeting at HIP with the aim of uncovering trends and key topics of discussion among the players driving the Spanish hospitality market today, through a wide range of business profiles and business models.
New entrepreneurial profiles, new business models that at times move away from conventional approaches, the resizing of restaurants, the scalability of hospitality projects, and, in general, a renewed vision of what entrepreneurship in hospitality means in 2026 are the aspects that define—or rather redefine—the current gastronomy ecosystem. In this environment, increased competition does not prevent niches and opportunities from continuing to exist, whether in large or small cities or even in new neighborhoods, to launch businesses linked to this sector.
The Culinary Action! session at HIP on the afternoon of February 16 will offer a close look at a variety of profiles of the players who are currently redefining gastronomic entrepreneurship in Spain, through projects that represent different business models, management approaches, and organizational structures.
