Miguel Caño
Miguel Caño is a Rioja-born chef and a leading figure in contemporary minimalist cuisine. Appointed Gastronomic Ambassador of La Rioja in 2024, he heads Nublo in Haro (one Michelin star, two Repsol Suns) and continues the family legacy at Los Caños. His cooking, shaped by fire and a deep connection to the territory, favors subtlety over artifice. Trained at Mugaritz, he champions a conscious, artisanal, and honest approach to gastronomy, and has established an R&D area and a training center within Nublo.
