In the showcooking “Transgenerational Tradition” we analysed the new traditional cuisine as a differential value proposition. This cuisine inherited from tradition and in which many European chefs are turning to squeeze their territories and develop a gastronomic offer closer and with legacy, defending the positioning of traditional cuisine, a refuge value in uncertain times that has remained in the market after the crisis of 2008-2011.
