From Labe Digital Gastronomy Lab, Basque Culinary Center, we present the Prospective Study of the Digital Restaurant: an analysis of interactions and needs with the focus on the Back Office of the Restaurant and a monitoring of the evolution of macrotendencies in food and gastronomy. From this analysis we have viewed and enlightened the possible implementation of technologies that will revolutionize the management of Hordeca establishments and the experience of its customers (artificial intelligence, Big Data, Robotics of precision, Blockchain, Intelligent Contracts, NFTS, Metavers -) .
