Analysis of the law against waste of the green roadmap for the Spanish hospitality industry, which will oblige establishments of more than 400 square metres to have a space dedicated to food in good condition with a deteriorated appearance, will encourage donations of food and drink in a perfect state of consumption; will oblige bars and restaurants to provide their customers with bags or boxes for uneaten meals and will require prevention and loss and waste reduction programmes from institutions such as health and educational centres or residences that offer catering or canteen service. Discussion with benchmark operators on best practices for adapting to and complying with this regulation.
