From the restaurant or the supermarket – where will the next innovation come from? (Roundtable)

René Redzepier closes his restaurant to focus on food innovation. The supermarkets are filled with kombuchas, ready meals, vegan cheeses and other innovative proposals born in restaurants of all kinds. In this session we will analyse the phenomenon of ‘cross-pollination’ between restaurants and supermarket shelves and learn about some success stories.
